Pork Fillet Mignon with Salsa Verde
Ingredients
- 12 mignon steaks
- 6 green tomatoes
- 2 jalapeño peppers
- ¼ medium white onion
- 1 clove garlic
- fresh cilantro
- Oil
Preparation
- Season cuts with salt and pepper and roast on the grill until brown on all sides.
- Boil tomatoes until throughly cooked.
- Grind all in blender with onion, garlic, chiles, cilantro and season the sauce.
- Serve sauce and lay cuts on top garnishing with bays refried beans, sprinkle with cheese
