Grilled Filet Mignon with Guajillo Chile sauce
Ingredients
- 12 mignon steaks
- 5 dried guajillo chillies
- ½ white onion
- 1 clove garlic, peeled
- 1 tablespoon chicken broth
- 1 tablespoon oil
- salt and pepper
- oil
Preparation
- Season each steak with salt and pepper then roast on the grill until golden on all sides.
- Boil the peppers until soft and grind them in a blender with onion, garlic, chicken broth and a tablespoon of oil. Fry and reduce sauce in a pan.
- Bottom of plate is covered with sauce and cuts served on top.
- Garnish with green salad dressed with a touch of reduced balsamic vinegar.
