Grilled Filet Mignon with Guajillo Chile sauce

Ingredients

  • 12 mignon steaks
  • 5 dried guajillo chillies
  • ½ white onion
  • 1 clove garlic, peeled
  • 1 tablespoon chicken broth
  • 1 tablespoon oil
  • salt and pepper
  • oil

Preparation

  • Season each steak with salt and pepper then roast on the grill until golden on all sides.
  • Boil the peppers until soft and grind them in a blender with onion, garlic, chicken broth and a tablespoon of oil. Fry and reduce sauce in a pan.
  • Bottom of plate is covered with sauce and cuts served on top.
  • Garnish with green salad dressed with a touch of reduced balsamic vinegar.
