Pork ribs with cactus leafs (nopales) and Red Sauce

Ingredients

  • Pork ribs rack
  • 1/2 onion
  • 10 cactus leaves cooked and cut into strips
  • 2 tomatoes, peeled, seeded
  • 2 garlic cloves, peeled
  • 1 tablespoon chicken bouillon granules
  • 3 sprigs of cilantro
  • 1 spring of rosemary
  • 2 slices of fried plantains
  • Salt and peppe

Preparation

  • Season with salt and pepper to taste, and roast ribs on the grill until cooked and golden.
  • Red sauce is prepared by grinding in a blender the tomatoes, garlic, onion, cilantro and chicken broth tablespoon.
  • Sauté the sauce and add the strips of cactus and a few leaves of rosemary.
  • Season to taste.
  • Serve sauce and place the ribs on top, accompanied with slices of fried plantain.
  • You can also use shredded skirt cut.
