Pork Hocks in Orange Chipotle Sauce
Ingredients
- 12 half hocks
- 2 cups orange juice
- 4 pickled chipotle peppers
- ¼ chopped onion
- 2 cloves garlic, minced
- Aromatic herbs
- Salt and pepper
Preparation
- Cook hocks in a pressure cooker with orange juice and remaining ingredients, for a period of approximately 45 minutes over low heat.
- At the end of cooking rectify the seasoning and thicken the sauce.
- Serve with steamed corn and butter.
