Pork Hocks in Orange Chipotle Sauce

Ingredients

  • 12 half hocks
  • 2 cups orange juice
  • 4 pickled chipotle peppers
  • ¼ chopped onion
  • 2 cloves garlic, minced
  • Aromatic herbs
  • Salt and pepper

Preparation

  • Cook hocks in a pressure cooker with orange juice and remaining ingredients, for a period of approximately 45 minutes over low heat.
  • At the end of cooking rectify the seasoning and thicken the sauce.
  • Serve with steamed corn and butter.
